Light, refreshing, and gently grassy, this ceremonial matcha reveals a delicate umami sweetness that unfolds with each sip into a smooth, balanced finish.

Crafted exclusively from first-harvest leaves, this matcha is shaded for at least 20 days before picking—a process that deepens its natural sweetness and umami while softening bitterness.

These leaves are stone-ground using a traditional ishi-usu mill, producing an exceptionally fine, velvety powder that whisks effortlessly to a smooth, creamy texture. While there is no common definition for ceremonial-grade matcha in Japan, this is the standard by which they judge the tea to be 'ceremonial'.

About the farmer:  Originally a fruit and vegetable farmer, Irie-san discovered the nourishing qualities of green tea following a period of ill health. Inspired by its benefits, he set out to cultivate the healthiest tea possible on his two-hectare farm in Fukuoka Prefecture. Today, he and his team mentor a small group of young, dedicated growers in organic farming, working toward a shared vision: transforming their hometown of Kuroki-cho into a fully organic community.

Origin:  Yame, Fukuoka, Kyushu Island, Japan

Specifications:  40 g

Use:

  • Use 2 tsp of matcha for every 2.7 oz. (80 mL) of water. Sift the matcha into your bowl to remove any lumps.
  • Boil water, then let it cool for about 40 seconds, or until it reaches 176°F (80°C).
  • Add the water to the matcha and whisk vigorously until a rich, frothy layer forms on top. Enjoy immediately while frothy.

Comins recommends enjoying this matcha plain. Optionally, you can serve over ice, sweeten, or add milk to your liking!
