Fishwife's albacore is pole-and-line caught in the Bay of Biscay and off the coast of South Africa by small-boat fishermen, in partnership with local fisheries known for landing exceptionally high-quality fish. It's packed in rich olive oil, brightened with fresh lemon juice from the Spanish Mediterranean coast, and finished with a sprinkling of salt.

The conservas  tradition refers to the long-standing craft of preserving seafood by canning it at peak freshness in high-quality oils, brines, or sauces. It’s not just about shelf life—it’s treated as a culinary art. Each tin is hand-packed at a traditional cannery in Northwest Spain, founded in 1869, reflecting this time-honored approach with carefully prepared fish that highlights its natural flavor, depth, and craftsmanship.
