The nakiri is a traditional Japanese vegetable knife featuring a flat, wide blade that stays in full contact with the cutting surface for swift, clean push cuts.
Measuring just over 12" end to end, Niwaki’s Nakiri Knife pairs a razor-sharp white paper carbon steel blade with an understated octagonal walnut handle. Its straight, rectangular profile is designed for push cutting, eliminating the need for a rocking motion. It cleanly slices, dices, and chops vegetables—from delicate leafy greens to dense root vegetables—and also makes precise cuts through boneless proteins such as chicken and fish.
Beautifully balanced and tastefully simple, carbon steel knives like this one are a popular choice for Japanese chefs, as they sharpen quickly and easily. While carbon blades can be sharpened to a finer edge and hold that sharpness longer than stainless steel, they do require a bit more care. Each handle is made from two pieces of walnut separated by a Micarta accent. As wood is a natural material, variations in grain, color, and texture are to be expected, and the two wood sections may not match exactly.
