Small Sardines in Extra Virgin Olive Oil

In Portugal, small fish like sardines are called petinga. In Southern Portugal, they're sometimes called esquilha, a name once given to the children of village fishermen. Simply prepared without preservatives, these sardines retain their fresh flavor, just as the esquilha would have enjoyed.
