Processing anchovies in the Cantabria region of Spain is still a traditional art. Anchovies caught in the Cantabrian sea are hand-packed, gutted, and placed in barrels with salt, where they mature for 3-7 months. After that time, they are washed, de-boned, and packaged in tins with olive oil at the Arroyabe family cannery in the Basque region of Spain.
