Brazil- Ivanyse Carvalho - Roast Level: Medium Light / Grown in Brazil
This Brazilian selection boasts big stone fruit notes, like apricots. It is sweet and tangy like a tangerine and has a rich sweetness reminiscent of grape jelly. The coffee variety and processing method used to craft this offering will appeal to those who like a heavier mouthfeel and milder acidity.
Fazenda Catigua in Minas Gerais, Brazil, led by Ivanyse Carvalho and her family, has transformed from a cattle pasture purchased in 1974 into a thriving coffee farm producing 2,000 bags annually. Their yellow bourbon coffee, processed using Brazil’s pulped natural method, retains the fruit pulp during drying, enhancing its thick texture, ripe sweetness, and clean acidity. This meticulous process, combined with the fruity depth of yellow bourbon, creates a cup that consistently impresses.
E.A. Decaf Pink Bourbon - Roast Level: Medium Light / Grown in Colombia (washed)
This is an(other)’s first decaf coffee and it’s really good! With flavors of plum, chocolate nougat, and a hint of caramel, this coffee has more personality and fruitiness than most decafs.
The secret lies in two key factors. First is the Pink Bourbon variety; it’s a fruity and delicious coffee plant directly related to Ethiopia’s original coffee trees. Second is the sugarcane decaf process, wherein the beans are decaffeinated using ethyl acetate (E.A.), a natural enzyme from sugarcane. This method preserves flavor and enhances fruity notes, making it stand out from other decaf processes.
