Carbon Mini Santoku Knife

Niwaki's Mini Santoku Knife is made in Japan with a sharp Shirogami White Paper carbon steel blade and an octagonal handle made of walnut wood.

The Santoku is the standard domestic knife in Japan. This Mini Santoku is slightly smaller than the full-sized Santoku knife, and both are ideal as good all-around kitchen knives.

Beautifully balanced and tastefully simple, carbon steel knives like this one are a popular choice for Japanese chefs, as they sharpen quickly and easily. While the carbon blades can be made sharper and stay sharper than stainless steel, they do require a bit more care. Please read our tips for Caring for Carbon Steel Knives before you purchase.
