A unique variation on the classic lima, this Rancho Gordo bean offers a rich, velvety texture and an almost nutty flavor—a true revelation for those who believe they don't like Limas. 

Christmas Limas, also known as Chestnut or Calico beans, are a flavorful heirloom variety originally from Peru. In Italy, they’re called Fagioli del Papa, or “Pope’s beans.” Meaty and full-bodied with a chestnut-like texture, they’re big, bold, and delicious in chili, curry, or simply drizzled with olive oil and a sprinkle of cheese. 

If you grew up thinking you hated limas, you owe it to yourself to give this one a try.

Specifications:

  • 1 lb. bag
  • Latin name:  Phaseolus lunatus

Use:  Check beans for debris, and rinse thoroughly. In a large pot, sauté aromatic vegetables in olive oil. Add beans and enough water to cover by about 2 inches. Bring to a full boil for 10 to 15 minutes. 

Reduce heat to a gentle simmer, using a lid to help regulate the heat, and gently cook until done, 1 to 3 hours. Salt when the beans start to soften. A pre-soak of 2 to 6 hours will lessen the cooking time.
