V-Eagle Double-Ended Knife

Regular price $130.00

Used in Japan by butchers and fishmongers for frozen cuts, this double-ended knife is exceptionally useful for heavyweight kitchen tasks such as breaking down pumpkins, squash, melons, and other dense ingredients.

The blade is made from durable molybdenum stainless steel, offering excellent edge retention and corrosion resistance, while the rosewood handles provide a comfortable and secure grip. The dual-handle design allows for greater leverage and control, making demanding cuts safer and more efficient.

Whether tackling hard-skinned produce or large-format prep work, this is a specialized tool built for jobs that would challenge an ordinary kitchen knife.

With proper care, a Japanese steel knife can provide many years of exceptional performance. Its finely crafted blade takes and holds an incredibly sharp edge, making precise cutting effortless. Because this harder steel can be more brittle than Western-style knives, it is best suited to careful, controlled use rather than heavy-handed chopping or prying.
