Island Creek x Mariscadora Tuna Belly in Butter

Indulgent tuna belly, paired with delicate handmade Galician butter, creates an otherworldly tasting experience. The butter in which this tuna is preserved is crafted in Galicia, Spain, by a lone neighborhood dairy farmer named Carmela. Every morning at 7am, she milks her cows and churns butter by hand, using traditional methods passed down through generations—free from modern machinery. 

How it tastes: Tuna belly is tender and buttery, with subtle sweetness and umami depth, while Galician butter adds creamy, tangy sweetness with earthy notes. Together, they create a rich, indulgent balance of savory and sweet, with a luxurious, lingering texture that blends the best of sea and land.

How to eat: For best results, heat it before you eat it.  Temper the tin before eating by steeping it in warm water for a few minutes. When the tin is warmed through and the butter is silky, simply eat the contents straight out of the tin, pour over fresh pasta, or slather on artisan bread.
